Most mornings, I am everywhere. I need to be up by 630, 7 or 730 depending on where I am substitute teaching that day, oil up, shower if I have to (which means I need to wake up 10 minutes earlier), choose a professional outfit rather than sweats and a shirt, make my lunch, make my tea, and make breakfast. Out of all of those, breakfast get's pushed to to last. Sometimes I just grab a granola bar (which is so bad and so wrong). But not now. Today, I have a day off from subbing and I found the easiest, quickest, and tastiest recipe that will help me get up in the morning and keep me energized and full. |
2 cups cooked quinoa
3/4 cup of pumpkin puree (or pumpkin pie filling like I did... tee hee)
1/4 cup brown sugar (or if you are lucky enough to have some, 1/5 cup of young living blue agave natural sweetener)
1-2 drops of nutmeg
3-4 drops cinnamon bark
1-2 drops of thieves
Once you've cooked your quinoa, turn heat to low, add your puree and brown sugar, mix. Add your oils. Mix. And you're done! Seriously! SO yum! Put into containers and store in the fridge. They should last up to a week, if you haven't eaten them for breakfast, lunch and dinner because it is so yummy!
